Bonus Cooking Video | Yogurt Mint Salad | Quick, Easy, Creamy & Delicious Side Salad

In this video, I create a healthy vegan Yogurt Mint Salad. Super simple and easy to throw together for a weeknight meal. You can make the dressing and keep it in a jar in the fridge to use on side salads throughout the week.

YOGURT MINT SALAD

Makes 4 side salad servings

Ingredients:
1/2 cup plain vegan yogurt (links below to my videos on how to make your own delicious soy yogurt)
1 teaspoon dried mint leaves, crushed a bit in your hand
1 clove garlic, peeled & pressed
1/2 teaspoon salt
1 teaspoon olive oil (optional)
8 cups washed and torn bitter lettuces (endive, arugula, radicchio) OR use boxed or bagged greens or salad mix, we like Spring Mix or 50/50 blend of Spinach & Spring Mix, use about 1/2 of a large box or 1/2 lb

Directions:
1. Blend all ingredients except lettuces in a small bowl with a fork or use can use a blender or food processor (no need to press the garlic if you throw it all in a mini food processor)
2. This blended dressing can be stored in an airtight container in the refrigerator to use throughout the week or use later if you like.
3. Place greens into a large bowl, toss with dressing, and enjoy.

Notes:
1. If you leave out the olive oil, this will be McDougall friendly and still delicious.
2. This is a side salad, not a full meal, enjoy with a high carb/high starch main dish to keep your tummy full & happy.
