Hi friends! In this week’s video, I give you the update on my progress after 1 full week on an all potato diet. I have lost 4 pounds! That’s awesome and great progress toward losing my Quarantine 15 weight gain.

I visited a naturopathic doctor today for my menopause symptoms and I plan to make some tweaks based on her advice. Potato meals are very healthy for helping me reduce hot flashes & night sweats. Good to know for any women going through the same. I will share more on that in future videos.

HOMEMADE HASH BROWNS RECIPE:
Makes 2 large servings
Ingredients:
4 medium sized pre-cooked potatoes
1 large or 2 small scallions, sliced
1 large handful of baby spinach, chopped
1 teaspoon onion powder
1 teaspoon garlic powder
Salt & Cracked Black Pepper to taste
Directions:
1. In a large bowl, add scallion, spinach & seasonings.
2. Grate cold cooked potatoes with a box grater. The skins won’t go through the grater, just slice and roughly chop those to add to the bowl. The skins have tons of nutrients.
3. Gently mix potatoes with veggies & seasonings. You can use your hand or a large spoon.
4. Place on a parchment lined baking tray. Spread out evenly.
5. Bake at 425 degrees F for 30 minutes.
6. Enjoy your big tray of crispy hash browns. We like ours with Louisiana Hot Sauce and a tofu based onion dip.
