Brown Rice Casserole | Cooking from Blogs

This week’s video is for a quick, healthy casserole for lunch or dinner. This recipe is from the Clean Food Dirty Girl website which has lots of great whole foods plant based no oil recipes.  This way of eating is super powerful for preventing, slowing down, halting, and even reversing all sorts of lifestyle diseases such as heart disease, type 2 diabetes, colon & intestinal issues, and even common cancers.

I share how I modify the recipe to bulk it up into a big casserole that makes at least 4 big portions so we have leftovers. “Cook once, eat thrice.” as my friend Stephanie says.  We always aim for at least eating twice each time we make a nice healthy homemade meal.  This recipe would be easy to modify by using whatever fresh or frozen veggies you have on hand.
