Bruschetta Stew | QUICK + EASY + HEALTHY Plant Based Recipe

Hello Real World Plant Based Diet Friends! This week’s video is another quick, easy, and healthy plant based recipe video. This stew comes together in 20 minutes or less and is a ONE POT MEAL (my favorite kind). I created this recipe with easy store bought ingredients so you can throw together a big pot of stew on a weeknight with very little prep or cook time.

This makes a big batch so you will have leftovers for lunches or another meal.  You can serve this with a super simple side salad with store bought vegan salad dressing if you like or just add baby spinach into the stew for some greens, like we did in this video.  We got 6 meals out of this recipe.  I hope you enjoy this easy, hearty, delicious recipe. BRUSCHETTA STEW RECIPE:

INGREDIENTS:
1 onion, diced or about 1 cup of pre-diced onions
1 large garlic clove, minced or pressed
1 tablespoon Italian seasoning
1/2 to 1 teaspoon red pepper flakes, optional
2 quarts vegan tomato soup
2 15oz cans lentils
5 oz baby spinach, about 4 large handfuls
Salt & cracked black pepper to taste
8 slices bread, toasted & cut into cubes, we used a good Italian loaf from the bakery
¼ cup nutritional yeast, vegan parmesan, or regular parmesan (for a vegetarian version)

DIRECTIONS:
1. Brown the onion in a dry pan over medium high heat until you get some nice brown caramelization on the bottom of the pan.  Add in the pressed garlic and brown it for about a minute.
2. Add Italian seasoning and red pepper flakes to onions & garlic, stir and cook for about a minute.
3. Deglaze your pan with about 1/2 cup water to get all of the lovely brown bits off the bottom of the pan.
4. Add both boxes of tomato soup and both cans of lentils (with can liquid) to your pot and bring to a boil.
5. Stir in baby spinach and bring to a simmer again until spinach is wilted and stew is heated through.
6. Season with salt & pepper to taste.
7. Toast enough bread to have 2 slices per person.  Cube toasted bread.
8. Dish up a big bowl of stew and top with bread cubes, vegan parmesan, and some extra black pepper.
