Cooking dessert from one of my new favorite sources of healthy dessert recipes – Chocolate Covered Katie. I show the whole process for cooking this simple, healthy, nutty, chocolatey, coconutty dessert. This was delicious, rich, and actually quite healthy. My husband Simon and I are trying to really cut down on sugar these days and the only sugar in this recipe is a small amount of coconut sugar and some vegan semi-sweet chocolate chips.
I am also adding in healthy fats and this has plenty from coconut oil, coconut milk, and nuts. I will be doing another video soon about FAT PHOBIA from the 90s and how I am shifting my perspective on healthy fats from whole plant foods.
These bars were really tasty and satisfying. Just one small bar makes a nice filling dessert. My pro tip after making this recipe would be to sprinkle your coconut + nuts + chocolate chip mixture on top, after the creamy coconut milk layer. It will make them look better, but the taste is DELISH if you use the recipe as written.
