Quick & Easy Vegan BURGER NIGHT Recipes: BLT Ranch Burgers (2 burger options) & Baked Potato Wedges

This week’s video is for a super quick & easy plant based meal made with store bought vegan convenience foods.  Maybe not quite as healthy as homemade, but delicious and super easy to throw together on a weeknight.    

I also give a quick & easy healthier homemade burger option and the quick recipe for making homemade baked potato wedges.  

I hope you enjoy this set of recipes for a quick & easy burger night, whichever option you choose. Or choose both like we do!  We love burger night on a Friday night with a tasty beer from our local taproom.

BAKED POTATO WEDGES:

INGREDIENTS:
6-7 average sized potatoes (we like Yukon Gold best), cut into wedges
Salt, malt vinegar, and vegan mayo for serving (or ketchup, vegan ranch, whatever you like to dip your fries in)

DIRECTIONS:
1. Preheat oven to 400 degrees.
2. Place potato wedges on a parchment lined tray.
3. Bake for 1 hour for nice browned crispy potato wedges.
4. Add salt and dipping sauces of choice.  Enjoy!


BLT RANCH BURGERS:

Makes 4 large servings

INGREDIENTS:

4 frozen vegan burgers of your choice (we used Gardein ultimate plant based burgers)
8 slices Lightlife smart bacon vegan bacon
4 hamburger buns
Vegan Ranch dressing
Fresh lettuce & tomato slices for toppings

DIRECTIONS:

1. Saute burgers and bacon in a nonstick skillet according to package directions.
2. Toast buns and top with burger, bacon, lettuce, tomato, and ranch dressing.
