Pressure Cooker Pasta | Quick, Easy, Healthy Plant Based Lunch or Dinner

In this week’s video, I share a super quick & easy plant based dinner (or lunch) idea.  Pressure cooker pasta.  This can easily be made on the stovetop as well if you don’t have a pressure cooker yet.  If you don’t, check out the buying guide below and get yourself one soon!  It is a great kitchen tool for making large batches of healthy, tasty plant based meals.

This easy weeknight meal was just thrown together with pantry staples and a few fresh greens.  We always keep plenty of bags & boxes of pasta in the house and jarred sauces of all kinds will work.  You can do vegan or vegetarian, oil-free or sauces with a little oil.  You can add veggies, top with spices, hot sauce, vegan cheese or regular cheese.  So many options you can have pasta a few times each week.  Leftovers are great for lunch.

PRESSURE COOKER PASTA RECIPE:

Ingredients:
1 pound pasta, white or whole wheat
3 2/3 cup water
2-4 cups chopped kale, hearty greens, or big chunks of broccoli (optional, add before cooking)
2-4 cups baby spinach, arugula, or kale (optional, add after cooking)
1 jar pasta sauce of choice
Hot sauce, vegan parmesan (or regular), red pepper flakes, cracked black pepper for seasoning

Directions:
1. Add pasta and water to pressure cooker.  Stir a bit to evenly distribute the pasta.
2. If using kale, greens, or broccoli, just set those on top of your pasta.
3. Seal the pressure cooker and cook on HIGH pressure for 6 minutes. (5 minutes for broken up spaghetti or elbow macaroni)
4. Do a quick release of pressure as soon as cook time is finished.  Use a towel over the steam valve to protect your kitchen cupboards.
5. Open lid and stir in a jar of your favorite vegan or vegetarian pasta sauce.  Stir in baby greens if using.
6. Gently place lid over pot and let sit 2-3 minutes for the sauce to heat through and baby greens to wilt.
7. Top with hot sauce, cheese, spices. Enjoy!

Other options to add in after pressure cooking: diced tomatoes, canned mushrooms, chopped parsley or cilantro, thawed peas, broccoli, or corn… any veggie add-in you can think of really.  We also love Lightlife vegan sausage crumbled and cooked added in or sliced Field Roast vegan sausages.  The options are endless.

Be sure to wash all parts of your pressure cooker lid well after venting starchy water.
