This week’s cooking video is for a hearty kale salad with veggies, brown rice, marinated sauteed tofu, and a crispy coconut & sunflower seed topping. This recipe (link below) is from one of my favorite healthy recipe blogs, Clean Food Dirty Girl. This made a great hearty dinner for us and was perfect for summer time as a warm or cold salad.
I show how to bulk up the recipe to make enough for at least 4 large servings. We always aim to get at least two meals out of every recipe we cook. I also share some shortcut tips for making your healthy home cooking even faster & more efficient (less dishes to wash!). I share ideas for adding in a lean meat option instead of tofu if you aren’t on a plant based diet.
My modifications from the original recipe:
1. I subbed 1 tablespoon granulated garlic instead of fresh garlic for the tofu marinade.
2. I used 2 tablespoons coconut aminos + 2 tablespoons avocado oil + the juice of one whole lime to massage the kale.
3. I used 2 large bunches of kale, 1/4 of red onion, 1 quart container of grape tomatoes, and about 3 large cups of brown rice to make a salad large enough for 4 large dinner meals. We will enjoy leftovers on another night and not have to cook that night.
