Mexican Couscous Bowls | QUICK + EASY + HEALTHY Plant Based Recipe

Hello Real World Plant Based Diet Friends!  This week’s video is another quick, easy, and healthy plant based recipe video.  This super simple couscous recipe comes together in 20 minutes or less and is a ONE POT MEAL (my favorite kind).  I created this recipe with easy ingredients so you can throw together a big pot of healthy, Mexican seasoned couscous with lots of fresh or frozen veggies.

This recipe is very healthy with no oil.  We used whole wheat couscous to make it even healthier.  This meal fits the McDougall eating guidelines and is considered WFPBNO (whole foods plant based no oil).  Whole foods plant based made easy.

This makes plenty of couscous so you will have leftovers for lunches or another meal.  Top heated leftovers with fresh cilantro, guacamole, onion dip, and hot sauce for garnish.

MEXICAN COUSCOUS BOWLS RECIPE:

Makes 4 large servings

INGREDIENTS:
1 large onion, diced or 2 cups pre-chopped onion
2 bell peppers, any color, diced
*NOTE: you can use a bag of frozen diced onion & peppers, just thaw and use instead of fresh
1 cup frozen corn, thawed
1 can black beans, drained and rinsed
2 cups dry couscous
1 packet taco seasoning (1 oz)
1 teaspoon salt
1 jar (18-oz) salsa
4 cups vegetable broth
4-oz guacamole
Chopped fresh cilantro (optional)

DIRECTIONS:
1. Brown the onions and peppers in a dry pan over medium high heat until you get some nice brown caramelization on the bottom of the pan.  
2. Add corn and let heat through.
3. Add salt and taco seasoning, stir to coat the cooked vegetables.
4. Deglaze your pan with about 1/2 cup broth to get all of the lovely brown bits off the bottom of the pan.  
5. Add the rest of the broth, the full jar of salsa, and black beans.  Bring to a boil.
6. Add couscous and bring to a boil again.
7. Turn off heat, cover pan and let sit for 5 minutes.
8. Stir to fluff your couscous. Top with cilantro, guacamole, and a bit of hot sauce if you like.  

We also love to top ours with a tofu based onion dip, link below.  For a smaller batch, simply use half the amount of each ingredient.
