VEGAN FISH TACOS | Easy Healthy & Delicious!

In this cooking video, I show you how to make healthy vegan fish tacos. A super simple weeknight meal using frozen vegan fish fillets heated up in the air fryer and loaded into fresh corn tortillas loaded with plenty of beans & veggies. Great for summertime with fresh veggies and fruit salsa. You can also use regular fish fillets if you aren’t vegan, they will be just as tasty & healthy.

You can make this recipe as simple as you like by reducing ingredients. These would still be super tasty with just tortillas, beans, fish chunks, and salsa or guacamole. Keep it simple and enjoy easy tacos for your homemade healthy Taco Tuesday night.

VEGAN FISH TACOS RECIPE:
Makes 8 tacos or 4 servings

INGREDIENTS:
16 corn tortillas, 2 per taco
1 bag Gardein vegan fish fillets (or any brand you like)
1/2 head red cabbage, sliced or shredded
1/2 onion, diced
1/2 cup fresh cilantro, roughly chopped
Juice of 1/2 lime
1 teaspoon salt

1 15 oz can black beans, drained & rinsed
1 jar pineapple or mango salsa
Guacamole
Vegan Onion Dip (recipe here: https://youtu.be/rfOy-ZkqlvQ)

DIRECTIONS:
1. Prepare fish fillets per package directions. We heated ours in the air fryer for 14-15 minutes at 390 degrees F.
2. Mix chopped cabbage, onion, cilantro, lime juice, and salt in a bowl to make a fresh slaw.
3. Heat corn tortillas on a gas burner as shown in video or warm in a toaster oven or skillet. They are stronger when they get warmed up.
4. Stack 2 tortillas together per taco. Add a layer of black beans, chunks of vegan fish fillet, salsa, fresh slaw, guacamole, and onion dip, about 1-2 tablespoons of each ingredient. Top with some Cholula or your favorite hot sauce.
5. Fold, eat & ENJOY!
