ROOT VEGGIE CHIPS | Homemade Version of Terra Chips

In this cooking video, I show you how to make healthy homemade root veggie chips. This was a remake of the spendy $$$ Terra Chips which my husband loves and can eat a whole bag at a time. These are a great way to ‘eat the rainbow’ and get a ton of beautifully colored vegetables into your diet as a snack or as a side with a salad, soup, or sandwich at lunch. These are great dipped into hummus or homemade onion dip.

ROOT VEGGIE CHIPS RECIPE:

INGREDIENTS:
1 large carrot
1/2 large beet
1/2 large parsnip
1 medium rutabaga or turnip
1 medium sweet potato
1 tablespoon avocado or olive oil
1 tablespoon aged balsamic vinegar
1 teaspoon onion powder
1 teaspoon garlic powder
1 teaspoon Italian seasoning
1/2 teaspoon dried parsley
1/4 teaspoon black pepper

DIRECTIONS:
1. Assemble food processor with slicing blade only (no S blade in the bottom). Run large chunks of all your veggies through the food processor to get even thin slices.
2. Mix oil, vinegar, and all spices in a large bowl.
3. Add sliced veggies to bowl and mix to coat with all of the seasonings.

OVEN BAKING OPTION:
1. Preheat oven to 400 degrees F, use convection oven setting if you have it, if not regular oven will work fine.
2. Spread chips in a single layer on parchment lined baking sheets.
3. Cook for 30-40 minutes, check at 30 minutes for crispiness level.
4. Leave on trays to cool and they will crisp up even more.

AIR FRYER OPTION:
1. Place about 2 cups at a time into your air fryer basket, leaving room to shake around and let air through.
2. Cook at 390 degrees F for 12-15 minutes, shaking halfway and checking at about 12 minutes for crispness. (As your air fryer heats up for later batches, its easy to burn the edges.)

NOTES:
1. Eat immediately. If you do store in a plastic bag or container, they may not be as crisp as leftovers.
2. Great dipped into hummus or homemade onion dip (recipe below).
